6 Dump-and-Go Crockpot Dinners
1. Classic Crockpot Pot Roast
A pot roast is the definition of a comforting slow cooker dinner. Tough, well-marbled cuts like chuck roast are full of connective tissue that breaks down over hours of gentle heat, turning into tender, juicy beef. Leaner cuts tend to turn dry, so chuck is worth seeking out.
Prep: 15 minutes | Cook: 8–10 hours on low or 4–6 hours on high | Serves: 6 | Difficulty: Easy (light chopping)
Key ingredients
- 3 to 3½ lb boneless chuck roast
- 1 lb baby potatoes, halved
- 4 carrots, cut into 2-inch chunks
- 1 large onion, cut into wedges
- 3 garlic cloves, smashed
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt and ½ teaspoon black pepper
- 1 bay leaf
Method
- Layer the potatoes, carrots, onion, and garlic in the bottom of the slow cooker. They take longest to soften, so they belong closest to the heat.
- Season the roast on all sides with salt, pepper, and thyme, then set it on top of the vegetables.
- Whisk the broth and Worcestershire together, pour around the roast, and tuck in the bay leaf.
- Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours.
- It’s done when a fork twists easily into the meat and shreds with little resistance. That usually happens around 195–205°F internally.
Optional finishing touches: For gravy, strain the cooking liquid into a saucepan, whisk in 1 tablespoon cornstarch mixed with 2 tablespoons cold water, and simmer until thickened. For deeper flavor, sear the roast first, though it’s not required.
Serve with: Mashed potatoes, buttered egg noodles, rice, or crusty bread for the juices.
Storage: Refrigerate leftovers in the cooking liquid so the beef stays moist.
Substitutions: Swap beef broth for beef stock, or use a brisket or bottom round if that’s what you have (bottom round may be a bit leaner). Parsnips or turnips can replace some of the potatoes.
2. Salsa Chicken
This may be the easiest recipe in the roundup. Salsa is tomatoes, onions, peppers, and acid in one jar, so it seasons and moistens the chicken at the same time.
Prep: 5 minutes | Cook: 4–6 hours on low or 2½–3 hours on high | Serves: 6 | Difficulty: Very easy (true dump-and-go)
Key ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 16 oz jar salsa (mild, medium, or hot)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen or canned corn
- 1 tablespoon taco seasoning, or 2 teaspoons cumin, 1 teaspoon chili powder, ½ teaspoon garlic powder, and ½ teaspoon salt
Method
- Add the chicken to the slow cooker and sprinkle with the seasoning.
- Top with the beans and corn, then pour the salsa over everything.
- Cover and cook on low for 4 to 6 hours or on high for 2½ to 3 hours.
- Check that the chicken has reached a safe internal temperature of 165°F. Cooking times vary by slow cooker, so start checking on the early side.
- Shred right in the pot and stir it into the juices.
Optional finishing touch: Stir in 4 oz cream cheese after shredding for a creamier filling.
Serve with: Tacos, burritos, rice bowls, quesadillas, salads, or piled onto rolls for shredded chicken sandwiches.
Substitutions: Thighs stay juicier if you tend to overcook. Pinto beans work in place of black beans, and a jar of salsa verde gives you a tangier version.
