6 Dump-and-Go Crockpot Dinners for Busy Weeknights

3. Honey Garlic Pork

This one is sweet, savory, and just sticky enough. Over hours of slow cooking, the honey, soy sauce, and garlic soften and blend into a glossy sauce that soaks into the pork. Pork shoulder (also sold as pork butt) is the right cut here, since it becomes fork-tender instead of drying out.

Prep: 10 minutes | Cook: 8–9 hours on low or 4–5 hours on high | Serves: 6–8 | Difficulty: Very easy (true dump-and-go)

Key ingredients

  • 3 lb boneless pork shoulder
  • ½ cup honey
  • ⅓ cup low-sodium soy sauce
  • 6 garlic cloves, minced
  • 1 tablespoon rice vinegar
  • ¼ cup chicken broth or water
  • 1 teaspoon grated fresh ginger (optional)

Method

  1. Whisk the honey, soy sauce, garlic, vinegar, broth, and ginger in the slow cooker.
  2. Add the pork and turn to coat.
  3. Cover and cook on low for 8 to 9 hours or on high for 4 to 5 hours, until the pork shreds easily with two forks.
  4. Shred the pork and toss it in the sauce.

Optional finishing touch: For a thicker glaze, stir 1 tablespoon cornstarch into 2 tablespoons cold water, mix it into the sauce, and cook on high with the lid off for 15 minutes.

Serve with: Steamed rice, roasted broccoli, stir-fried noodles, or grain bowls. Sliced green onions and sesame seeds are a nice finish.

Note: Pork is safe at 145°F, but shoulder needs to reach about 195°F or higher before it shreds nicely.

4. White Chicken Chili

A hearty, one-pot dinner where the chicken, white beans, and green chiles do all the work. It’s milder than red chili, so it’s a good pick for families with mixed spice tolerance.

Prep: 10 minutes | Cook: 6–7 hours on low or 3–4 hours on high | Serves: 6 | Difficulty: Easy (shredding at the end)

Key ingredients

  • 1½ to 2 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 cup frozen corn
  • 3 cups chicken broth
  • 2 teaspoons cumin, 1 teaspoon oregano, and salt to taste

Method

  1. Add the onion, garlic, beans, chiles, corn, and seasonings to the slow cooker.
  2. Nestle the chicken on top and pour in the broth.
  3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken reaches 165°F.
  4. Shred the chicken, return it to the pot, and stir.
  5. Mash a few beans against the side of the pot to thicken the broth naturally.

Optional finishing touch: For a creamy version, stir in 4 oz cream cheese or ½ cup sour cream or Greek yogurt at the end.

Dairy-free option: Skip the dairy and mash more beans, or stir in ½ cup canned coconut milk.

Toppings: Avocado, shredded cheese, cilantro, a squeeze of lime, tortilla strips, or a spoonful of sour cream or Greek yogurt.
